Laguiole Pizza Knives

Laguiole en Aubrac creates the Laguiole pizza knife in France, by hand, for one job: slicing up a whole pizza before it is served. It is sold singly and used as a serving knife: you cut the pizza once, for everyone at the table. Check the blade for Laguiole en Aubrac’s name, since anyone is free to put Laguiole on a knife, factory-made ones included.

A pizza cutter is usually a wheel, yet a knife lets you guide a straight cut from centre to crust. It goes by other names too, pizza slicer and pizza cutting knife among them, and either way the job is cutting one whole pizza into slices. Choose ebony or zebu horn tip, both polished, or walnut, and every knife’s certificate of authenticity has its own number. For help choosing, see the UK Buyer’s Guide to Laguiole Pizza Knives.

Choosing a pizza knife: wood or horn

Ebony has a polished, glossy finish, and so does the zebu horn tip, while walnut shows a grain that differs from knife to knife. Each is a natural material, so no two handles look exactly alike. Whichever handle you settle on, the knife is Laguiole en Aubrac's work, handmade in France, and the blade bears that name. Other handle woods are in the range too, so go for the one that sits best beside the cutlery you already own.

Pizza knife, rocker or wheel?

A pizza rocker is a broad, curved blade that you rock across the pizza from one side to the other, usually with both hands. The wheel moves quickly but can pull the toppings along with it. A pizza knife is worked with one hand, one cut at a time, so you decide the size of every slice before anyone is served. With Laguiole en Aubrac's version, you choose an ebony, walnut or zebu horn tip handle.

Using a pizza cutting knife, step by step

Give the pizza a minute or two out of the oven so the cheese firms up. Lift it onto a board, start in the middle and draw the knife towards the edge, crust and all. Turn the board and repeat until there are as many slices as you need. With a deep or generously topped pizza, cut slowly and steadily so the toppings stay put. After serving, clean the knife by hand at the sink and wipe it dry at once.

Pizza knife questions from UK buyers

What is the best tool to cut pizza?

For a whole pizza, a knife made for the purpose lets you guide every cut yourself, from the centre out. The best pizza knife is one you are happy to bring to the table and use in front of everyone. Laguiole en Aubrac's version, handmade in France, comes in ebony, walnut or zebu horn tip, among others.

How many slices are in a pizza?

Eight is the usual number for a round pizza, though smaller ones are often cut into six and larger ones into more. There is no fixed rule: it depends on the size of the pizza and how many people are sharing it. With a pizza knife you set the number yourself, drawing each cut from the centre out to the crust. Laguiole en Aubrac handcrafts its pizza knife in France.

Do Italians eat pizza with a knife and fork?

Often, yes: in Italian pizzerias a pizza usually arrives whole, and each diner cuts it at the table with a knife and fork. At home, one pizza tends to be shared, which is where a pizza knife comes in: you cut the whole thing into slices before serving, then pass them round. That is the job Laguiole en Aubrac made this knife for.
