Laguiole Bread Knives
Each Laguiole bread knife in this shop comes out of Laguiole en Aubrac’s workshops in France, made by hand. There are two shapes: the Classic, with the curved handle and twin bolsters of a traditional Laguiole, and a straight-handled version that looks more like a cook’s knife. Both share a long serrated edge, and every knife is sold singly, its certificate of authenticity carrying its own number.
Thanks to the teeth, you can cut a crisp crust without flattening the soft middle, so either shape makes a good sourdough bread knife and is just as useful on a bloomer or a tin loaf. Others know it as a bread saw or a bread cutting knife. Choose satin-finished olive wood on either shape, polished zebu horn tip on the Classic, or walnut on the straight handle. A closer comparison of the two shapes is in the UK Buyer’s Guide to Laguiole Bread Knives.

Bread cutting knife: Classic or straight handle?
If the rest of your table is Laguiole, the Classic is the natural choice, with its curved Laguiole handle, here in olive wood, zebu horn tip and other materials. The straight-handled version suits a cook who keeps the bread knife with the other kitchen knives, and it comes in walnut and olive wood, with more woods in the range. Both do the same job, so choose the grip and the look you prefer.

Why are bread knives serrated?
A smooth edge tends to skid on a hard crust and press the loaf flat before it cuts in. Teeth catch the crust at their points, so you can saw through with light pressure, and a crusty cob keeps its shape while a soft brioche stays in one piece. That is why most bread knives have a serrated edge, and both Laguiole shapes here have a long serrated blade. It is the wrong knife for dicing an onion, so keep yours for bread, cakes and pastries.
Using a sourdough bread knife, step by step
Let a fresh loaf cool for an hour before you cut it, or the crumb turns gummy. Lay it on a board and steady it with your free hand flat on top. Start at the far end and saw with long, light strokes, keeping the blade upright instead of pushing down. With a round cob, halve it first, then slice each half from the cut face. Laguiole en Aubrac makes both bread knives on this page, Classic and straight-handled, by hand in France.
Questions UK shoppers ask about bread knives
Which knife cuts bread best?
A long one with a serrated edge. The best bread knife is one that crosses the whole loaf and lets you saw rather than press, so the slices come out even. Laguiole en Aubrac offers that edge in two shapes, Classic or straight-handled, each handmade in France.
Why do you need a bread knife?
Because a fresh loaf tends to squash under a cook's knife before the crust gives way. A serrated knife made for bread avoids that, and with it you can saw through a bloomer or a cob without squashing the crumb. Pick the Laguiole en Aubrac version and you get a knife handmade in France, one you can bring straight to the table when the bread is passed round.
What's a bread knife?
A knife with a long serrated edge, made to get through crust without crushing the soft crumb inside. You cut with a gentle sawing motion instead of pressing down, so the loaf is not squashed. Laguiole en Aubrac makes two versions by hand in France: the Classic, with the curved handle of the traditional Laguiole, and one with a straight handle.
Each order contains a care leaflet. Hand-wash the knife, dry it straight after, and never let it go in the dishwasher.
