One-of-a-Kind Laguiole Knives

Handmade in France by Laguiole en Aubrac’s most experienced cutlers, every piece in this range of one-of-a-kind Laguiole knives exists only once and will not be repeated. Its handle is cut from a material with no identical twin, its plates are decorated by hand to a design that’s never copied, and it even has a name of its own. For anyone browsing luxury pocket knives, that’s the appeal: the knife you choose is the only one of its kind. For more background, read our UK Buyer’s Guide to Laguiole Limited Editions & One-of-a-Kind Pieces.

Choose from burr walnut, with its swirling chocolate grain, bog oak darkened almost to black, or elder burr in reds, blues and violets. Some pieces add a Damascus blade, copper plates or an inset stone. When one is sold, it stays on the page marked as sold, a reminder that each of these unique pocket knives goes to one buyer only. If one catches your eye, it won’t be back.

What makes each piece a one-off

Laguiole en Aubrac reserves these knives for its most experienced cutlers, and each piece begins with a handle material that will never be matched. The knife takes its whole character from that grain, colour and figure. The plates are then decorated by hand, to a design kept for that piece alone. Some pieces also carry a number, like those in the series named after the Eiffel Tower. The result is a luxury pocket knife from France, unlike any other, and christened with its own name.

Burr walnut, bog oak or elder burr

Burr walnut is the warm, traditional option, with a rich brown grain that swirls into knots and tiny eyes. Bog oak, known in France as morta, spent centuries buried in peat before it was found, and it comes out a deep, almost black brown with a quiet sheen. Elder burr is the bold choice, in reds, blues, pinks or violets that make the handle the first thing anyone sees. For more sparkle, look for copper plates or a set stone. Whichever you choose, no one else will ever hold the same handle.

Beautiful pocket knives to keep and to use

These beautiful pocket knives deserve a place in a display cabinet, yet each one opens and cuts like any Laguiole. Bring it out at the table to slice a pear or some Cheddar, then fold it away. On pieces with a Damascus blade, its rippled pattern sets off the grain of the handle, and our guide Laguiole Knives with Damascus Steel Blade explains what to look for. Between meals, leave it out on a desk or shelf, where the handle catches the light.

Your questions about one-off knives

What is one-off production?

It means making a single item, with no run of identical copies behind it. That's exactly how these knives are made: Laguiole en Aubrac crafts and decorates each one by hand in France, using a handle material that can't be matched, so a second copy is impossible.

What is burr walnut?

Burr walnut comes from the burr, a knobbly growth on a walnut tree, where the grain forms dense swirls and curls. It has long been prized for fine furniture and car dashboards, and on a knife handle it gives a warm, glowing brown that's different on every piece, which is exactly why it suits a one-off knife.

What is bog oak?

Bog oak is oak that has lain buried in peat bogs for centuries, sometimes for millennia, slowly darkening to a deep brown or near-black as the wood absorbs minerals from the water. Dense and scarce, it has long been prized by cabinetmakers. On a Laguiole handle, it gives a calm, dark depth, and no two handles are ever quite alike.

Each knife is sent with care instructions. Wash it by hand, dry it without a moment's delay and keep it out of any dishwasher: the handle will then stay as beautiful as the day you chose it.
